DOLMEH FELFEL (Persian Stuffed Bell Peppers)




 

 

Dolmeh felfel – a traditional dish of rice, herbs and meat stuffed into bell peppers, and you slow cook it with all the delicious spices. It takes a while to prepare everything, but it's worth it. 

 

There are many different dolmeh recipes internationally, but it's the spices that makes it special, and different! 

 

In Iran, they only make it with green bell pepper, but I use all of the different colours of bell peppers to make this dish. I just like how it looks colourful, and the tastes of each bell pepper is different. 

 

This is one of my favourite recipes, and I can’t wait to share this with you.

 

 

Ingredients

 

·      6 bell peppers

 

·      Vegan meatless ground beef (optional)

 

·      1 cup of rice (long-grain basmati rice)

 

·      ½ cup of yellow split peas

 

·      4 tbsp tomato paste

 

·      1 cup chopped fresh parsley

 

·      1 cup chopped fresh chives

 

·      ½ cup of fresh mint

 

·      2 tbsp of dried tarragon

 

·      ½ cup of fresh dill

 

·    2 tbsp of lemon juice

 

·    1 medium onion

 

·    4 cloves of garlic

 

·    Salt and pepper

 

·    2 tbsp of turmeric

 

·    Oil



INSTRUCTIONS




Step 1: You will need to cook your rice with two cups of water. Make sure to add a bit of salt & oil in the water for the rice. It will help for your rice not to be all sticky! 

 

 

 


 

 

 

Step 2: In a small pot, add the yellow split lentil and water in it. Let it boil and cook it until it gets soft.

 

  


 

Step 3: Now it’s time to cut the bell peppers! Take a knife and start to cut the stems and cut the top of each and one of them. Make sure to wash it with water and take the seeds 

away. 


 


Step 4: For this step, you can use a food processor or just use a knife to cut the herbs.




  

Make sure that you blend it well, or chop it finely!




  

Step 5: In a non-stick pan, add your chopped onion in the oil, and let it cook until the onion gets translucent. Then add your minced garlic and let it cook for another 2 minutes.

Make sure to add some salt, pepper and turmeric too!  

 

Optional: You can add your vegan ground beef in it, and let it all cook together, but I personally don’t use it since the other ingredients are more than enough.




 

 

Step 6: Add the herbs in the pan. Let it cook for another 2 minutes until you smell the fragrance of the herbs.


 


 

 

Step 7: Add your cooked rice and yellow split peas! Mix everything up. Taste seasoning and add more if needed. 





Step 8: Now, it’s time to stuff the bell peppers! Be generous and make sure to put lots of it inside.


 


 

 

Step 9: Place the bell peppers in a huge pot.

 

 

 

 

Step 10: Mix 4 tbsp of tomato paste with 500 ml of water, fresh lemon juice and a bit of oil. Make sure to pour it inside the bell pepper, and on the outside too. 





 

  

Step 11: Then place the top back on each bell. Please make sure to add a bit of more water in the pot if needed. Place the lid on and cook it in medium heat for an hour.
